CSM expands specialty bread market with ancient grains
Netherlands enterprise, CSM, is the leading
player in its sectors worldwide; it is the largest supplier of bakery products
and a leading player in natural food preservation and green chemicals. CSM is
introducing a new mix of ancient cereals - spelt, emmer and einkorn - in a bid
to tap opportunities in the specialty breads segment. Ancient grains and
cereals have enjoyed a revival of interest in recent years, as they answer the
increasing demand for less-processed ingredients and more nutritional foods. Mintel’s Global New Products Database (GNPD) identifies 176
products using spelt as an ingredient launched in Europe
in the last 18 months. Five years ago there were less than 70 per year. CSM states
that its target segment, specialty breads, saw 4 percent growth in 2009 in the UK, to
reach a value of £485m. CSM’s new bread blend
combines spelt with the two grains from which it was developed around 4000BCE;
emmer and einkorn.
